Operating Instructions:
Step 1: Unfold the legs of the mandolin and lock into the open position. Step 2: Select and insert the blade or blade(s) into the frame of the mandolin. Make sure the blade “clicks” into the slot on the opposite side. Step 3: Slide the base of the food holder over the mandolin frame and allow it to rest at the bottom of the lower plate. Step 4: To properly position the food within the food holder and ensure the best results, place the food in the base of the food holder. Step 5: Push the two-piece food holder top over the base so that the food is impaled on the internal spikes. Step 6: Lift the two piece food holder top off the base (with the food attached to the internal spikes), rotate it 180 degrees and then place it back on the food holder base. This will reposition the food securely against the rear portion of the food holder base so that it will not move as it engages the blade(s). Step 7: Insert your fingers into the food holder’s finger cavity. Step 8: Slide the complete food holder past the blades and onto the upper plate. Step 9: While holding onto the handle of the frame, with fingers inserted into finger cavity and maintaining downward pressure on the food holder, push it aggressively towards the blades until it reaches the bottom of the frame. This will result in a slice being cut from the bottom of the food and deposited under the mandolin. Step 10: To adjust slice thickness, loosen knobs on either side of the mandolin frame. With knobs loosened, raise or lower the upper plate to the desired slice thickness. There are slice thickness markings on the inside upper portion of the mandolin frame. Once slice thickness is set, re-tighten the knobs.
